Leftover Corn Salsa, Black Bean Salsa ~

If you know me, I make salsas and sell them at Barn Sales, Craft Shows, Farmer's Markets, and Etsy. Every Saturday, May through September, I am at Hendersonville Farmer's Market at The Streets of Indian Lake.  I am very big on sampling.  It really makes a difference in sales, especially when it's good~ I came home a bit tired and decided to make something with left over "sample" jars of the Corn Salsa and the Black Bean Salsa.


I put both the leftover salsas into a pot. Heated it up a bit....


Bought at the Farmer's Market some beautiful Mustard Greens from the best organic farm, Delta Sun Farm...


Chopped those beautiful tasty greens and added them to the salsas....


Heated it through, I like the greens still a bit crunchy, not mush...


Put that mixture over some cooked pasta and sprinkled freshly grated Parmesan cheese on it with a drizzle of my dipping oil blend....yum, yum....for sure~
